  Alchemy is correct. Aside from the change of name saliva works alchemy on the food we eat. Maybe its that when we let it leave our mouths it is no longer a magic fluid. It gets a downgrade in title for being useless mucous fluid with nothing left to do but dry up.
  I have heard people call it spit while it was still behind the lips... We produce around 1.5 liters a day... I like mine chilled with an olive.
